Basil-Marinated Strawberries

Looking for an updated version of sugary sweet strawberries?  How about basil-marinated strawberries?  I found this recipe online from the San Diego Reader.  It comes from William Bradley, the executive chef of Addison.  Try it with your favorite scoop of ice cream!  It's delicious!

INGREDIENTS

2 cups water

2 cups sugar

4 basil leaves, whole

2 baskets fresh strawberries

PART 1 - WHITE CHOCOLATE CREAM

Ingredients / Materials:
125 g (4 oz) white chocolate buttons (melts)
60 ml (2 fl oz) cream
small heatproof bowl
small pan
water

How to Use Chocolate Molds

Need to make favors?  Or just want to learn how to use chocolate molds?  These directions are pretty easy, but keep in mind there are other more complicated molds (such as peanut butter cups).

Materials needed:
- candy mold ($2-3 at Michael's)
- candy melts / chocolate buttons (any color or flavor - $3 at Michael's)
- small glass bowl
- teaspoon

One bag of Wilton's Candy Melts will make about 100 hearts.

Directions:
Step 1 - Place about 25 melts into the glass bowl and microwave for 30 seconds.

Very Berry Frozen Yogurt

Makes about 14 1/2-cup servings

Ingredients:
3/4 cup whole milk
1/3 cup granulated sugar
4 cups lowfat vanilla yogurt
18 ounces frozen mixed berries, thawed, pureed and strained to remove seeds
1 teaspoon pure vanilla, almond, or lemon extract

Glace Icing

Makes enough to cover a 22 cm (9 in) round cake.

 

Ingredients:

185 g (6 oz) icing sugar

1 teaspoon unsalted butter, softened

4-8 teaspoons milk or water

food coloring

 

Directions:

1. Sift the icing sugar into a bowl and stir in the butter and enough milk or water to make a thick paste.

2. Color the icing at this stage if necessary.

Bavarian Chocolate Cream Horns

I found this recipe in an old issue of Cuisine at Home. The look of it caught my eye so I thought I’d give it a shot. The recipe looked a little complicated, but it was easier than I thought.

Bavarian Chocolate Cream Horns

Ingredients for horns:
8 sugar cones
2 sheets frozen puff pastry (17.5 oz box)
1 egg
1 t water
1/2 C turbinado (raw) sugar

Cap’n Crunch Seared Tuna

Scoma’s Lazyman’s Cioppino

Over Thanksgiving, I went home to the Bay Area to visit the family. One of the things I like to do when I’m home is to get the Lazy Man’s Cioppino at Scoma’s restaurant at Fisherman’s Wharf. I remember growing up and going to Scoma’s after the Niners games or anytime we were up in SF and I’d always get the Cioppino. Unfortunately, there had just been an oil spill in the Bay recently and people were saying not to eat crab. Even crab boats were not going out because they were banned from selling anything they caught.

Just had to post this recipe. Idon’t like to cook/bake anything for others unless I like a lot it myself and I LIKE IT! Originally, I wanted to try this dessert because the picture in the recipe book caught my eye. Who knew that the taste and the texture would be just as good. Sweet and chocolatey. Crisp on the outside and chewy on the inside. 3 ingredients, easy to make, tastes great. What more could you want? This is definitely one of my new favorites!
