Eclipse Chocolate (South Park) - Cupcakes

I'm not usually that into cupcakes but after a drool-worthy cupcake tasting at Eclipse Chocolate Bar and Bistro, I'm definitely craving them a bit more! July 4th-6th 2014 is the Seventh Annual Cupcake Extravaganza and will be the perfect opportunity to grab some delicious treats and have a chance to win a YEAR'S WORTH OF CUPCAKES! Yes, that's 365 cupcakes from Eclipse Chocolate for some very lucky person!

Eclipse Chocolates - Cupcake Tasting

At the private cupcake tasting I attended last week, we were presented with 12 of the 24 flavors that will be available this weekend. Cupcakes were my lunch for that day!

Eclipse Chocolates - Citrus Tarragon Cupcake

One of my favorite flavors was the Citrus Tarragon. There is sweet citrus marmalade inside with candied tarragon on top! I liked the frosting on all of their cupcakes because it was fluffy and not sugary sweet like store-bought ones.

Eclipse Chocolates - Red Velvet Cupcake

This is the Real Red Velvet, of which there were two versions to try at the tasting. The chef made this as natural as possible (no artificial dyes) so it's not as red inside as you'd expect. One of his versions didn't taste so much like red velvet but was unique and better than the yellow cake IMHO!

Eclipse Chocolates - Bourbon Caramel Pecan Cupcake

This is the Bourbon Caramel Pecan. The caramel in these is quite good and not overly sweet. On my previous visit to Eclipse, I avoided their caramel chocolates but after tasting this one, I may reconsider!

Eclipse also has a few gluten-free cupcakes. This beauty is the Blueberry Cheesecake.

I LOVE the layers inside of the cupcake! So tempting just looking at the picture!

Eclipse Chocolates - Chocolate Creamsicle Cupcake cut open

This is the creamy insides of their yummy Chocolate Creamsicle and I couldn't even tell that it was gluten-free! Good job!

Other flavors that I was able to try included Tres Leches with its fluffy and not too sweet frosting on yellow cake. There was also several goat cheese cupcakes that were pretty good too. There's even one topped with sweet candied bacon and more caramel!

There are plenty of other flavors so grab a box this weekend! In fact, I think I’ll be picking some up for some festivities coming up this weekend! Have a happy fourth of July everyone!

I love their cupcakes and sweets because nothing is overly sugary or sweet - it's all "just right". I didn't have time to swing by this weekend for the event but it all looked delicious! Looks like you had fun getting all of that sugar :)

I really wanted the cupcakes this past weekend but didn't have time to drive 30 minutes each way just for cupcakes. I'll have to pick some up at regular price in the future. I would love any recommendations of other cupcake places with similar frosting if you know of any.

I don't really know another place that does cupcakes/frostings like these! Most places just do buttercreams, no ganaches! If I find another place though, I'll let you know. Yummy Cupcakes in Encinitas does some good ones with tons of rotating flavors. Another cupcake place I like is Batter Up! in Rancho Bernando, but again, those are more "regular" cupcakes. Sugar & Scribe in PB is also very good if you're out that way as well. Eclipse is very unique though!

I won cupcakes from you for Yummy Cupcakes but never got a chance to redeem (can't find voucher anymore). The only other place I have some experience was Cupcake Love but that location seems to be closed now. I'll check your site later for reviews on the others you mentioned. I may end up sticking with Eclipse despite the drive!
